How do you protect yourself from being stunned - charmed - confused ?

Depends on what's stunning you, but ring of free action and other spells that affect mobility will help. Also spells against magic in general could too. If you mean by psionics, then spells or items that protect against the mind work wonders.

You could always use a protection from magic scroll........
(they're pretty rare though)

Invisible Stalkers

Increase saving throws by casting luck, potions etc.....(items that do those things)

Potions of mind focusing work wonders. They also may give you an extra AC or two from the +3 Dexterity bonus.
