ok i am thinking of either a Kensai dueling to a thief or can i have a thief duel class to a kensai? I really want that extra HP, profieciences and thieving skills for hiding in shadows

i have a true class thief i want to dual, what should i dual to?
i've done the kensia thing and want to try something new.
and what level should i wait for before i dual?

Theif? I suggest you to duel to a mage, since the hitpoints bonuses from a fighter is not a consideration as you have already started off as a thief. ANd you can always try something a bit different.

Go with Kensai then dual to thief, the extra HP can really help when your theif is at low level but you Kensai bonuses will ONLY come back when your theif class is at least 1 more level higher than Kensai. If you plan to dual to a mage, then pick a swashbuckler. If you plan to dual to a fighter, then assassin is a pretty good choice. If you are into setting traps and play differently, then switch the above 2 thief kits with a bounty hunter.
