I forget the nutral priest kit but I know you get the special ability to create a +4 sword in your hand.
if your character was a duel thief to cleric could you use your backstab skill with it?

yes! but you will get penalty, because you are not specialized, it is not a good idea

You can't have a cleric/thief, cant happen Im afraid.

Yep. There is n Cleric/Thief MULTI-class (unless using Dragonlance Kenders), but you can DUAL to thief if you like
