Was thinking of doing a full install, and was trying to think of what you all think is the best downloads to add to it.

Full install-- no CD switching yeah!!

Team BG 50th rules pack--get the level limit removed and right amount of skill and stat gain

Bonus CD down load -- I have the collector edition and boy was I dumb, for about a month I didn't bother to install it, doh! But this would give me both merchants, instead of just the one that my cd has.

Any other input would be appreciated, especially item editors. I am currently in a Visual Basic course (only up to chapter 7 and its VB6), and would like to design some of my own items.

If you're seriously into making/desighning items the TeamBG messageboards will serve you better.
But what you suggest is fine:-

Level 50 rules pack/EXP remover(i couldnt get it to install?).
Bonus CD merchants(2 files that unzip to overrides folder-easy!).

-NOTE, shadowkeeper doesn't actually install to your BG2soa folder at all,it can be put anywhere.(mine is on my desktop)
