I just finished the game and it sent me to the new game start screen. I thought I could still go around and complete and side quests I havent finished yet. Any way around this??

Nope, that's how it is suppose to end. You can try to complete the remaining quests when you were back in Chapter 6 or during the first part of Chapter 7 (before you face Jon on the Tree of Life).
