Depends, are you planning to use a single class thief (ie. not dual or multi)?

Than stick with two tanks (Keldorn and Minsc), Aerie can give you the cleric/mage support also a slinger, it is a good idea to have Jaheria as a spell caster (druid) and backup tank. You'll probably pick up Imoen later on, but in the mean time take Nalia along (for gold and experience, she can also be a potent mage). You might or might not want to switch Nalia with Imoen at the end, but that's up to you (or have both, which I always do for my good party). The remaining spot should be left open for NPCs so you can do their specific quest.

An assasin wil probably be evil, so I would say:

Korgan, tank
Jaheira, mage spoiler and back-up tank
Edwin, best mage by far, don't bother with Imoen
Viconia, best cleric and very resistant to magic, plus with Str boost can tank.

The other slot you should leave for NPC,s to fill during their quests. If not try Haer Dalis. You dont really need another brick as both Viconia and Jaheira can double up with the right items. If you insist, go for Minsc or Valygar.

I have a question on this. Can the game be beaten without using Imoen/Yoshimo then? If so, me next character (a Stalker) is going to skip them.

Yes, you don't need them at all. If you want a thief, use Jan. I finished the game without either of them, as I played a mage/thief.

Jan is excellent. Those magic items of his boost his Thief abilities up huge amounts

Heh....not to mention his "party" talks.... it definitely boost morale.
