How do you pull up monsters stats in shadowkeeper?.

anyway isn't there a header called creatures?

My guess is that if it were anywhere, it would be in the "out of party characters" section. You should find it in the drop down menu at the top of the window.

I haven't used Shadowkeeper to do this though. I think I used Infinity Engine Explorer to look at creature files.

You can't do it in Shadowkeeper. Use Infinity Explorer instead. You can get it from the Ironworks link I just gave you, go to editors.
