Best way to get spells is to just complete all the quests, and check everything. I've found too many spells to even use doing that.

Otherwise, you can get great spells in the graveyard area by going into the tombs and killing the stuff in there. A thief with high level open locks or a mage with knock is useful for opening chests and caskets.
