All the options I set (autosave, controls, etc..) return to defaults every time I quite and restart the game.

no. altho, i have seen it happen to others.

->have you patched your game?
->if so, which one?
->if you have patched, was it on top of another patch?
->improper installation of one patch on top of another is the biggest reason for this happening. (it can be difficult knowing if you have installed it correctly, as everything -appears- to be okay.
