I'm going through the game again, this time as a ranger.

My question is, if I have a base wisdom of 18 and I pick up the three tomes of wisdom, giving me 21, will I gain more cleric spells in the later levels of this class? And does the same apply to paladins?

No, and no.

A little longer answer:
Rangers can only learn up to level 3 spells.

Well sure, but I thought maybe with a wisdom bonus, I'd get more spells from each of those levels, like a cleric.

Dundee, do you mean that a paladin also does not get extra spells with an uber-wisom score?

WIS spell slot bonuses only apply to Clerics and Druids.

Rangers cannot cast more than 3 spells in any of their spell levels

With DSotSC and the Harder MOD installed, you are allowed up till 5 '*'s in a weapon proficiency on every kind of fighter (paladin, ranger, pure fighter, multi class fighter and dual class fighter) and 2 '*'s for other classes.
