Undead are generally immune to paralysing attacks, so you can also try summoning some to aid your cause.

thalantyr also has potions that lasts for a few rounds if you don't have a mage

Or if you ahev a mage with the Ring of Wizardry you can make him/her learn lots of Protection from Petrification
(Oh well, as long as I'm here anyway I might as well help some people )
