I know that when you wipe the game data your characters keep all of their money and equipment but loose guild ratings etc.

They also loose all of their previous classes, becomming just their current one, right? Does this mean that all of the class specific traits and skills are lost as well, or do they get to keep them?

No, you keep all skills, traits, spells etc.

How excetly do u restart the game after u complete the whole game or in the middle of a game?

Use the 'restart adventures' button in the game options screen.
