I remember reading in the descriptions of helmets in other games, like BG1, BG2, and IWD1, that helmets protect you from critical hits.

Text like this is absent in IWD2 helmets. Do they do anything?

No, nada, nyet. Unless you find a magical one, they are nothing more than fashion accessories.
