I am playing a Paladine with Caviler Kit.

I am lvl 8 with str=18/74 dex=18 con=18, intl=3 wis=13 con=17

Also presently an AC of -6

Would there be any advantage in turning into a dual class?

Paladin's can't dual-class. At least not under 2nd edition rules they can't. Since those are the rules used in BG2 those are the rules that matter.

either the chavalier or undead hunter are good kits, i personally favor the undead hunter over the chavalier...you can use bows, and crossbows...

now the chavalier, especially if you put points in axes, can use throwing axes...

Cavaliers can use throwing weapons, like throwing knives or throwing axes. There's a few very good ones of those around.

Cavalier and Undead Hunter are very similar but I'd go for the Cavalier as BG2 is not only packed with undead but also with some very powerful anti-undead gear and spells. So if you have a cleric in your party or have found one of the many fine anti-undead weapons you won't need the kit boni.
As for Int=3 "Erm...I have an order of radiated hart please. No I don't want it mixed up, just fried, I guess?"
