I am a bit confused currently, I know if your romancee gets imprisoned, the romance is ruined, but what about Jaheira's quest?
Also, whats the CLUA/Shadowkeeper codes to find out if the romance is ruined or not? I haven't played this particular game in a while and so I don't know if I'm romancing Jaheira or Viconia, or how to start them back up again, so any help would be greatly appreciated.

Bring up the CLUAConsole and type in GetGlobal("JaheiraRomanceActive","GLOBAL") to find out the stage of your romance. It'll have one of four numbers come up.

0 - romance was never started,
1 - romance is progressing,
2 - romance lives, NPC is finally in love with you,
3 - romance is dead for good.

If the romance is dead, type in SetGlobal("JaheiraRomanceActive","GLOBAL",1)<---or one of the numbers above. But if both Jaheira and Viconia are having a romance with you, there will be a certain point that comes into the game where you have to decide when they break out into a big arguement.

Would that work for Viconia? And then shadowkeeper lets you put in around what lovetalk you want it around, correct?

Yea, it also works for Viconia, just put her name in instead of Jaheira's. As for the lovetalks, it's unclear to me so I can't really help you there.
