Boo is Minsc's pet hamster. Don't worry, you'll find him.
The guys at the cellar join you but only for a short duration. Only for the practice session. You can have them in the party which has been talked about in another thread but they where not supposed to be NPC's that you can take through the game.

If the people in the cellar you are talking about are in Candlekeep, they are illusions, which is why if you take their items they disappear from your inventory if you leave and why you don't take damage in the fight. As for why one of them backstabbed you I can only guess that you hit him/her with a damaging spell effect that turned the character hostile against you...

im interested, having the weapons and items would be a good kickoff to begin the game with

WHO IS BOO?? He is the most important charecter i the whole game thats who he is!! There is a way to import the wepons into the real part of the game, I'm not sure, but i think you have to start a new game and just import your old player.
