When I'm creating a fighter or sorcerer is intellegence or wisdom actually affect anything with them.

Wisdom will really only effect the effectiveness of a wish or limited wish spell, along with certain (but, rare) dialogue choices. Intelligence will allow you to resist the effects of a mind flayer a bit more easily (can take more hits before dying, so I would reccommend at least 10 int if you can spare it.) there are also a few dialogue choices you receive for a higher int, but nothing really vital. If I were you, I would make a template for a fighter something like 18+str, 18 dex, 18 con, and 10+int (you can really skimp on cha and wis for pure fighters.) For a sorceror, I would make something like 12-14str, 18dex 12-16con, 18 wis (if you like wish that is, personal preference here) 10+int, charisma can really be nulled here. Another thing to note is charisma is pretty useless IMO, because of the abundance of charisma modifying items. I have played through BG 2 with both of these stat sets, and they are really quite effective lol, almost a bit too easy.

And in those cases, a potion of insight will give you all the WIS you ever need.
(we're only talking fighter or sorcerer)

1-5 Int will kill you in one hit. 6-10 will kill you in two, you need 11+ to survive three hits.

Also consider the demon in Spellhold who will zap one point of either your STR, CON, DEX, INT or WIS. I always pick INT, so my standard PC always has a minimum of 12 INT.
