Saving Throw bonus (or penalty), duration and on whom it works.

Charm Person -> +4 bonus to saving throw, works only on humanoids (like Hold Person)

Dire Charm -> no bonus or penalty to saving throw, humanoid only I think

Domination -> -2 penalty to save, works on anything (like Hold Monster)

Mental Domination -> Priest spell (unlike above three), don't know other than that

There are two effects in the game: charm creature and control creature. Charm creature is used in the charm person/dire charm spells and is usually set to work on only non-elf humanoids, while control creature may be set to work on any type of creature, even dragons. Being immune to "charm" does not necessarily make you immune to "control", or vice versa.
