1) Is there anything else to do to the Rhumphy dude in the crypt but to kill him?

2) How many levels should I keep a character in his original role before ascending him to another?

1. No you can kill him every time you enter the crypt for all those experience points and flog his wand of stars for a few bob.

2. I know it affects the magic users more, something to do with levell of spells they can learn.

Might be best to keep your magic users until they are level 14. Warriors and Rogues you can change earlier if you want.
