is it possible to beat the chromatic demon of the watchers keep level 2 with only a solo fighter??? if so how?

Using different weapons whose special abilities harm the different forms of the demon. I think that's a good starter.

This is really testing my memory, as I've not done this battle recently, but in addition to Six's subtle hint, I think that you can ... (Ctrl-A or Click-and-drag-over for spoiler below) <font color=#3d2f1b>... use the Necklace of Missiles several times while it's in its ice incarnation, and finish it off with a blast from the Ring of Ram. This was the approach that I think I took with my Cavalier about three years ago(!), who obviously had no access to missile weapons. Celestial Fury's blast can be used also. If, like a solo Cavalier or Monk, your access to elemental damage weapons and spells is limited, you can always severely weaken the CD by luring its Air incarnation into whatever room that all the Poison gas is blowing around in. Try to get in the killing shot yourself, though.
