No creature is even immortal if you got the wooden stakes. Against undeads, using rapidly your ring of ram and protection from undead, hold undead spells are very useful. And you can remove its protection with pierce magic breach etc

Then I could always wait until it has wasted its spells, but that would be frustrating. |
Cast breach, that takes pro vs magic weapons off it, alternatively damage dealing spells.
Also use a wall of summoned creatures to stop it getting near you and eventually its combat protections will come down-allowing you to chop him into tiny little bits. |

Two words my friend, Animate Dead.
