I'm about to go down and find half of a rod in order to destroy the beholder on de quest to deal with the Cult of the Eyeless. However, as i open the sarcophagus I can't win the next fight. Is there any special strategy to deal with the creature that suddenly appears???

You mean the lich?he's not that hard compared to Kangaxx hehe.Cast some protection spells,summon some animals to take his attantion and attack him.Shouldn't be very hard.

Position your party on where the lich is going to spawn, force attack him before he even talks.

Ooooooookayyyyy... in the Temple Sewers, north of the main base of the Cult of the Eyeless, is a sarcophagus. The lich inside is VERY hard, but is part of another quest. However, you don't have to fight him if you don't touch the sarcophagus. The Cult Outcasts nearby will tell you: leave it alone. Note: Travelling past the sarcophagus is vital to the Eyeless quest, because near to it are the stairs down... but to where?
