If I had only ONE wish it would be (cheesily): OMNIPOTENCE
I need no wishes then and if I can't handle it I can always fetch me a nice, car, money, world peace (and all the other standard wishes) and restore me back to...erm..Unomnipotence (should have wished for Omniscience as well I guess :D )

1. Be able to change my shape at will and never be able to lose myself in the transformation. I could be anything and change myself into a younger version of myself (live forever) or I could change into a new life form of my own design which doesn't require sex to reproduce, go to Mars, and spawn a new civilization.
2. A perferted one. I would wish to be able to transport myself and someone of my chosing to an alternate mini-reality where the other person is crazy to get in the sack with me and then transport back to reality without repurcussions and the other person remembering.
3. Be able to grant up to 23(just a prime number I seem to like) powers (of my own design) to any one(s) of my choosing and be able to take them back and reshape them to give to others. Obviously there would be some limit to the powers (example: I couldn't give myself the ability to grant wishes).

Of course all I really need is the last one since I could give myself the first two with it.

3 wishes... cool.

To be listened to whenever I speak justly, for my words to be considered and thought over thoroughly and fairly by any who listen, and for me to never, ever be misunderstood.

You could do a lot with those.

1. first off, world peace
2. i can do anything i want to do when i think of it (like Q in star trek :D )
3. more wishes in the future

I DON'T want omnipotence, and I certainly wouldn't want other people to have it. I don't trust myself with power like that and neither do I think most other people I know can be trusted with it. Being able to do anything you want for the rest of your life can get you into a whole lot more trouble than you bargained for.
