Some of you may no, that I spent a good deal of time, experimenting, trying to get an Assassin/Ranger happening, but I failed...
Ignoring class restrictions, that would be my choice, Human of course, to get the dual-class.

Easy, an elven bladesinger. My version would cast spells like a bard, GM the longsword and be able to stealth. Bladesingers are awesome!!!

I would prefer to be a human samurai, but applying this to BG2 I like the human Kensai with grand mastery in Katanas, and single wielding.

Although, in real life I would probably end up being an Jester.
