hmm... by how much are they worse, isn't the +1 point in DEX worth it?

And how about halfling berserkers then? They also get good saving throws I believe, and they get a +2 bonus to DEX as compared to dwarf. Strength is irrelevent because from what you say he will be enhancing it with girdles and other items anyway.

So isn't the DEX more important than saves? Aren't saving throws less important since the rage will be granting him immunity anyway? It would help to know the numerical values of saves for those 3 races.

A Dwarf will live longer, a Half-Orc will make more saving throws.

Usually a Barbarian and a Berserker are pretty close in power, but since you're going to "un-nerf" Grandmastery, the Berserker blows the Barbarian away.
