Try some different tactics. Personally, I can turn Beholderkin into floating bags of EXP by casting one single spell and wandering around with a Wand of Cloudkill. All Tactics did to change that was require me to have an anti-Poison item as well--oh dear.

well right now my group is in the underdark (just entered really) my stalker is on level 14. Jaheria, fighter is like 11 and druid is 13. Minsc is 14. Imoen is 12. Aerie is 12 on both, and Haer'Dalis is 15. I am pretty sure all can cast 6th level spells, expect my rangers...they cast level 3 spells

Im guessing you went to the shark lair think which gives a pretty decent amount of xp, not to mention the blade for the silver sword.
